Anything-Bread
- 1/3 C. Magarine or soy butter
- 1/2 C. Sweetener (Sucanat, turbinado, date sugar, maple syrup)
- 2 C. Flour
- 11/2 tsp. Baking powder
- 1/2 Baking Soda
- 2 Ripe bananas or 2 C. shredded zuchini
- 1/2 C. Soymilk
- 1 tsp. Vanilla extract
- 1/2 C. Chopped walnuts
Preheat oven to 350 degrees. Cream the margarine and sweetener, then stir in the flour, baking powder and baking soda. Add the remaining ingredients and mix well. Pour into an oiled 81/2 x 41/2 inch bread pan and bake for 50 minutes. Cool and eat!
Easy Chocolate Cake
- 2 1/2 C. Flour
- 2/3 C. Cocoa powder
- 2 C. Sweetener (Sucanat, turbinado, date sugar, maple syrup)
- 2 tsp. Baking soda
- 1 tsp. Cinnamon
- 1/2 tsp. Salt
- 3/8 C. Canola oil
- 2 3/8 C. Water
- 1 tsp. Vanilla extraxt
- 1/8 C. White or cider vinegar
Mix all ingredients from flour to salt with a wire whisk. Mix the liquid ingredients from canola oil to vinegar in a separate bowl. Mix the the dry and wet ingredients only until well mixed. Do not overmix. Grease and flour a 9 x 12 cake pan. Pour batter into the pan and bake at 450 degrees for 45 minutes. Test the cake with a fork, when it comes out clean, it done. Cool cake and add your favorite icing or eat plain with soymilk! Yum.
Eggless Egg Salad
- 1 1/2 Pounds of firm tofu, mashed
- 1/2 C. Eggless nayonnaise or vegannaise
- 1/2 C. Chopped fresh parsley
- 1/4 C. Relish
- 1/2 Medium onion, chopped
- 2 Stalks celery, chopped
- 1 1/2 tsp. garlic powder
- 1/4 tsp. tumeric
- 1 1/2 Tbs. Mustard
Combine all the ingredients in a large bowl. Spread on sandwiches or crackers.
Deep Dish Pizza
Crust:
- 3 Cups Unbleached Flour
- 2 packages Powdered yeast
- 2/3 C. + 4 Tbs. Warm water
- 1/4 C. Olive oil
- 1 tsp. salt
Pizza: ( * = optional )
- 1 Can or 1 1/4 C. pizza sauce
- Veggies like: mushrooms, onions, etc.
- *Gimme Lean sausage (pan fried in small balls)
- *1 Can mock duck
- *Veggie pepperoni
- *Veganrella cheddar cheese, grated
Dissolve yeast in warm water. Mix all ingredients and knead for 5 minutes. Put dough in a slightly oiled bowl. Place a towel over the top of bowl. Let rise for 1 hour (or 30 minutes for quick-rise yeast). Preheat oven to 425 degrees. Spread dough evenly into pan. Add pizza sauce and toppings. Bake 20-25 minutes. Cut, cool and eat!
Macaroni & Fake Cheese
- 14 oz. Uncooked elbow macaroni
- 4 C. Water
- 10 1/2 oz. Soft silken tofu
- 1 C. soymilk
- 1/2 C. Tahini
- 3 Tbs. Nutritional Yeast flakes
- 1 tsp. Tumeric
- Salt to taste
- 2 Tbs. margarine or olive oil
Cook the macaroni until done. Preheat oven to 350 degrees. Blend tofu and soymilk until smooth, add tahini, nutritional yeast, tumeric and salt. Mix until smooth. Stir together sauce and macaroni. Put in a slightly oiled casserole dish. Top with magarine. Bake until gold and bubbly (about 20 minutes).
