Easy and Quick Raw Apple Pie

Crust:

  • 2 C. Walnuts
  • 5 C. Dates (Medjool dates work best)

Filling:

  • 3 Apples
  • 1 Banana
  • 1 C. Currants
  • 1 Lemon
  • 1 Tbs. Cinnamon
  • Extra currants for garnishing (1/8 C.)

In food processor, combine dates and walnuts for crust. Process until mixture is well blended and free of chunks. Press mixture into a pie plate and put into refrigerator. Quarter one of the apples and remove seeds. Cut each quarter into several pieces and put into food processor. Squeeze lemon and add one teaspoon of lemon juice to apples in processor. “Pulse” mixture in processor until grainy (not a saucy) consistency. With spatula, spread mixture on flat lower portion of pie crust. Quarter remaining two apples, remove seeds, cut quarters into several pieces and place into processor. Peel banana, break into several pieces and place into processor. Add the remaining lemon juice, currants and cinnamon to processor and mix until well blended. Pour mixture into pie plate and garnish with extra currants on top. Cool 1 hour and eat.

Raw Tahini Dressing

  • 8 oz. Tahini
  • 2 Lemons, juiced
  • 2 Cloves garlic
  • 1/4 tsp. Cayenne
  • Braggs Liquid Aminos (or soy sauce)

Blend in food processor, add water to desired consistency. Keep in refrigerator.

Colorful Seaweed Salad

  • 1/4 C. Instant Wakame seaweed
  • 1 Zucchini
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 1 Avocado
  • 2 Tbs. Dill
  • 1/2 Red Onion, minced
  • 2 Tbs. Lemon juice
  • Braggs Liquid Aminos to taste (or soy sauce)

Clean and cut zucchini and peppers into small chunks. Mash inside of avocado into smooth paste. Combine all ingredients and mix well. Ready to serve. Keep chilled.

Zucchini Carrot Soup

  • 3 Medium sized zucchini, shredded
  • 1 Carrot, shredded
  • 1 Bunch scallions, minced
  • 1/2 C. Basil, minced
  • 1 Clove garlic, minced
  • 1/3 C. Tahini
  • 2 C. Water
  • 1/2 tsp. Paprika
  • Braggs Liquid Aminos (or soy sauce) to taste

Blend tahini and water. Mix all ingredients together and garnish with paprika. Chill 1 hour and eat.

Protein Patties

  • 1 1/2 C. Sunflower seeds
  • 1/2 C. Walnuts
  • 4 C. Alfalfa sprouts
  • 1/4 C. Scallion, minced
  • 1/4 C. Fresh parsley, minced
  • Braggs Liquid Aminos (or soy sauce) to taste

Process seeds and nuts with an S blade in food processor into a fine paste. Process alfalfa just enough to mince. Combine all ingredients together. Press into patties. Serve on a bed of lettuce with your favorite dressing.
